Chin mount: Putting a camera on the chin bar of the helmet and setting it to the widest FOV possible is the closest thing you can get to seeing. How to change ISO settings in-camera: Power on your GoPro. Press and hold the [Preset Pill]. Scroll down to [Protune]. Tap [ISO Min]. Use the slider on the right to select your desired minimum ISO setting. Tap an open area to the left to return to the [Protune]. Tap [ISO Max]. Use the slider on the right to select your desired maximum ISO setting.
There is no one setting good for everything and your settings will need to be adjusted based on your surroundings, time of day, available light and cloud cover. Take a gander through the 99% Wiki for some good reading on settings and making good choices for your footage. 2.7K@30 is probably a better place to start, or 4K@30

There is no one "best setting". That is the dumbest response in a Q&A post I may have ever seen. Suggestions, opinions of what’s worked best for some is helpful. Obviously there isn’t one best setting but there are definitely better setting than others dummy.
